Doughnuts!

One day we decided to bring a little bit of good ol' Lancaster County to Grenada in the form of ...DOUGHNUTS!  We kind of missed Fauschnacht Day, but it was holiday and we needed some doughnuts in our bellies, and we were in the mood, and so we made doughnuts. 



It turned out to be an almost all-day process.  We set the dough in the sun so it would rise faster.  It didn't.  Then we went to work cutting out all those doughnuts.  Eventually we stopped saving all the doughnut holes.  Then we left them to rise.  You would think with the warm temperature that we have here, that they would rise quickly.  They didn't.



But eventually we got done.  And the finished product was worth it.  And then we had an overload of doughnuts on our hands.



But we were not about to let those temptations sit around in our house all day.  So the doughnuts were shared out.  And now (thank goodness) there's only a few rejects sitting on the counter.


Since one of the only places I knew that made doughnuts seemed to have disappeared or went out of business, these will be the last doughnuts I have for awhile.  But I wouldn't say that that's necessarily a bad thing!

Just in case you develop a craving for these good ol' diet-busters, here you go...

2 cups mashed potatoes
1 qt. scalded milk
1 cup sugar
1 cup margarine
3 pkg. yeast
1 tsp. sugar
½ cup warm water
4 cups flour + 8-10 cups
2 eggs
1-1/2 tbsp. salt
Dissolve yeast in warm water and sugar. Cream sugar and margarine. Combine all ingredients adding flour until it isn’t sticky. (12 – 14 cups total). Butter hands and flatten dough evenly. Cover and let rise until double. Don’t punch down. Roll out dough on floured surface and cut donuts. Let rise. Fry in oil at 350 degrees.
Glaze:
1 stick margarine
2 lb. confectioner’s sugar (7 cups)
1 tsp. vanilla
Cream or water (1/2 – 3/4 cup)
